HACCP plan development and reassessment: BRS writes HACCP plans and provides training for CCP (critical control point) verification, monitoring, and validation. BRS is a continuing service that helps with reassessments and regulatory reviews.
Prerequisite programs: Supporting programs to HACCP plans are developed to help processor address areas of concern in the HACCP plan that should not be critical control points ie cooler temperatures, receiving procedures, processing- room environment.
Sanitation practices and measurements of effectiveness: BRS works with crews to train and monitor chemical handling. Programs are developed to help company with cost effective sanitation. BRS can help companies with dual use rooms to keep cross-contamination issues under control. BRS works closely with many vendors of sanitation chemicals.
Validation of anti-microbial treatment for CCP development. BRS has a validation laboratory for testing protocols of anti-microbial treatment for carcass products. Additionally we test treatments for fully cooked product for post-lethality treatment of Listeria monocytogenes.
Product safety development: In developing a food safety program BRS performs lethality studies and shelf-life studies. As part of food safety programs for fully cooked items, BRS develops Listeria monitoring programs for Alternative I, II and III.
Programs supported by BRS microbiological laboratory. Pathogens detection is performed using PCR methods.
